Ingredients
12ozgarbanzo beansdrained
¼cuplight mayo
1Tbsplemonjuiced
½tspblack pepperground
¼cupcelerydiced fine
¼cuponiondiced fine
¼cupchivesdiced fine
2tomatoessliced
8slicesmultigrain bread
4tspdijon mustard
Instructions
In small bowl, using a fork, coarsely mash the chickpeas. Stir in the chives, finely diced onion and celery.
In separate small bowl, stir together the mayonnaise, mustard, lemon juice and pepper; stir mayonnaise mixture into chickpeas.
Toast bread if desired and build sandwich with salad, tomato slices and arugula.
