Legumes

Legumes come from seeds or pods of the Fabaceae family of plants. Dried beans, peas, lentils, soybeans and peanuts are the most common although fresh beans, peas and frozen edamame are also considered legumes.

Did you know?

  • Legumes are a great vegetarian protein. Try them in place of meat in stews, chili and soups.
  • While “nut” is in their name, peanuts are in fact legumes.
  • Legumes are unique in that they can be counted in two food groups – protein or vegetable!
  • Protein, iron, zinc, folate, potassium and fiber make legumes nutrient powerhouses.
  • Great for dip! You can puree more than just chickpeas for hummus. Other legumes make delicious dips too.
