Ingredients

  • 1 cup oatmeal
  • 1 cup fat free vanilla Greek yogurt
  • 2/3 cup unsweetened coconut milk
  • 1/3 cup sweetened shredded coconut
  • 3/4 tsp turmeric
  • 3/4 tsp coconut extract
  • 1 tsp chia seeds
  • 2 ea Red Delicious apples
  • 1/2 cup blueberries fresh

Instructions

  • In a large bowl or jar with lid, combine the oats, yogurt, coconut milk, shredded coconut, turmeric, coconut extract and chia seeds. Mix well.
  • Cover mixture and place in the refrigerator for a minimum of 8 hours or overnight.
  • Portion chilled oatmeal into 6oz servings. For each serving, top with 1 tbsp fresh blueberries and 1/4 of a fresh, cored and sliced apple.
