Florentine Scramble Breakfast Burrito

Ingredients

  • 1 each tortillas whole wheat
  • 1 each egg
  • 1/2 cup canned cannellini beans, low sodium
  • 1 cup baby spinach
  • 1 tsp grated parmesan cheese
  • 1 spray cooking spray

Instructions

  • Whisk egg.
  • Spray pan with cooking spray. Add beans and spinach and cook for 1 minute until spinach is wilted. Add egg and black pepper. Stir and cook until egg is cooked through. Put scrambled mixture into tortilla, sprinkle with parmesan cheese and wrap.

Chef Tips

Cooked dry beans can be used in place of canned.
