Beyond Steak and Eggs Cheese Grits

Ingredients

  • 1.5 cup cheese grits
  • ¼ cup pico de gallo
  • 2 eggs
  • 2 tsp oil
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/3 cup diced yellow onion
  • 4 oz beyond steak
  • 2 cups arugula

Instructions

  • Prepare cheese grits and pico de gallo.
  • Heat oil, cook onions and peppers for 2-3 minute. Add beyond steak and cook until heated through. Hold warm.
  • Cook 1 egg to order with pan spray.
  • Toss arugula with pico.
  • To assemble one serving place ¾ cup of grits in bowl, top with ¾ cup steak and onions, top with fried egg, and 1 cup or arugula tossed with pico.

Chef Tip: Squeeze with fresh lemon or lime to provide an extra boost of flavor on the greens.
